What does Hollister mean when he says that Greco-Roman culture never disappeared?

When Hollister says that Greco-Roman culture never disappeared, he means that its influence can still be seen in Western culture today. For example, many of our words, such as "democracy" and "republic," come from ancient Greece and Rome. Our legal system is also based on Roman law. Even our architecture and art show the influence of Greco-Roman culture. In short, Greco-Roman culture is still very much alive today, even though the ancient Greek and Roman Empires are long gone.
